      Spinach Artichoke Dip w/Tortilla Chips              Beef Barley Soup

 
New YorkStyle- Margarita Pizza
Margarita is a light Pizza with Olive oil, Garlic, fresh Basil, fresh Tomatoes, Mozzarella, and Parmesan cheeses. This oven hot pizza is perfect with a glass of wine on any evening.
 
Chicken w/ Bacon White Wine Sauce
All White meat Chicken Breast is sautéed with Onions, Bacon, Mushrooms, and a White Wine Sauce.
 
Pork Tenderloin w/Cinnamon Apple Chutney  
This all Natural Pork is seasoned and slow Roasted then sliced and severed with warm Cinnamon Apple Chutney.
 
 Grilled Flank Steak w/ Fried Green Tomatoes
 Flank Steak ismarinated in Olive oil, Garlic, Salt, Pepper, and Lime juice then Grilled and Sliced and Served with Fried Green Tomatoes.
 
Filet of Cod Du Jour
A White Flaky Fish from the Atlantic Ocean, Seasoned, then Grilled, Blackened, Sautéed, Poached, or Baked. Tartar Sauce is served upon request.
This week ask your Server to have us bake it with a Buttery Ritz Cracker Topping.

Residents enjoyed their famous Grouper, Yellowfin Tuna and Snow Crab clusters!

Pumpkin Pie

What makes a room smell better then Baked Pumpkin Pie?   If you carved a Pumpkin but forgot to save it for Baking, there’s still a way to have your pie.

Ingredients

  • 1 (9 inch) unbaked deep dish pie crust
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 eggs
  • 1 (15 ounce) can 100% Pure Pumpkin
  • 1 (12 fluid ounce) can Evaporated Milk

Directions
1.                Preheat oven to 425 degrees F.
2.                Combine sugar, salt, cinnamon, ginger and cloves in small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
3.                Bake for 15 minutes. Reduce temperature to 350 degrees F.; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate. (Do not freeze as this will cause the crust to separate from the filling.)

All Faiths Food Bank BackPack Stuffing Party

Community Outreach is of the utmost importance to Jacaranda Trace staff and residents. We have been fortunate enough to partner with All Faiths Food Bank in raising funds for the BackPack for Kids Program. Twice a month, the food bank delivers non-perishable items to Jacaranda Trace. Our residents and the Arts & Leisure Department pack the items into bins, and the food is later arranged in Backpacks.  Eventually these are handed off to students in need of meals. This volunteer activity is just one more step in bringing child hunger to an end, and Jacaranda Trace is a part of that action!

Computer Classes

We live in technology-driven world, which is why Arts & Leisure partners with the Adult & Community Education Center to bring our residents classes that will help them master the latest computer advances. In October, classes were offered which taught on subjects such as "Understanding Facebook," and "Email and Internet Basics." Thanks to these courses, many of our residents now feel more comfortable surfing the web, connecting with old friends and communicating via email with children and grandchildren.

Old Fashioned Roasted Chicken
Your Choice of White or Dark Chicken on the Bone, Quartered, then Seasoned with Herbs and Spices, and Roasted until Perfectly Done, Served with Mashed Potatoes and Chicken Gravy.
 
Savory Pork Stew w/ Buttermilk Biscuit  
Pork Tips Braised in a rich stew of Vegetables and Potatoes until fork tender then served with a Buttermilk Biscuit.
 
Delmonico Steaks with Whiskey Butter-
 USDA Choice Steaks Cut and Trimmed from the Beef Rib-eye loin, Seasoned, Grilled to your Specifications, and Topped with a Whiskey, Dijon Mustard, Fresh Parsley, and Worcestershire Sauce Compound Butter.
 
Filet of Sea Bass Du Jour
A Pacific Waters White Flaky Fish Seasoned, then Grilled, Blackened, Sautéed, Poached, or Baked to your Preference. Served with your choice of Tartar Sauce or a Fresh Pineapple Relish.
